Greek Almond Sweets - Greek Thermomix Book & MWOC

Name of Recipe: Almond Sweets
Number of People:Makes approx 35
Ingredients:

150g sugar (I used raw sugar)
300g almonds, blanched
1/4 MC orange flower water
1/4 MC cognac
Caster sugar, for coating
Cloves, optional


Preparation:

Put sugar in TMX bowl and mill for 20 seconds - Speed 9.
Add the almonds to the bowl and grind for 10 seconds - Speed 6.
Add the orange flower water and cognac and combine for 6 seconds - Speed 6.
The mixture will be quite rough but smooths as you mould it into shapes.
Mould into ball or pear shapes. Coat in caster sugar and add clove on top, if making into pear shapes.

Tips/Hints:
You can purchase orange flower water online from 2brothersalmonds.com
You can blanch almonds by boiling for 15 mins or so and using thumb and pointer finger to skin almond out of skin. It is probably good to dry the almonds out on a tray in the oven for 10 mins or so too.
