I cooked with butternut and peeled it so sounds like I need to try cooking it longer :)

I roast my butternut in the oven before making soup.  I simply cut it in half lengthwise, remove seeds (not the skin) salt and drizzle with olive oil.  Scrape out the cooked flesh and use it to make soup.  Absolutely delicious, smooth and silky.
Never ask a 2 year old to hold a tomato  :-)
