Kumara Salad (non TM)

Kumara - peeled & cut into chunks, as many as you want
Bacon, chopped
Onion - cut into largeish chunks...

Par-boil (or steam) kumara, spray with oil and bake for approx 1hr (depending on size.)
1/2 way thru cooking, spread with dressing (recipe below), and put the chopped bacon and onion on top to cook too.
Once cooked, place on a serving platter and sprinkle with parsley.

Dressing
1/4C sour cream
1/4C mayonnaisse
2Tblsp water
2 Tblsp mustard.

This makes a lot of dressing, I find it enough dressing for 2 lots of approx 25 1inch chunks of kumara, depends on how thick you spread it.  :D
