Chicken Scaloppini (with photo)

Hi everyone,

I haven't been much around lately. I was busy with some alterations in the garage, plastering, painting... etc.
I also had a 3 days weekend escapade.
From Friday I will be in Istanbul so I wanted to post this one today.
If I can make it I'll post one more recipe before we leave.

Chicken Scaloppini

Ingredients:
600g chicken breast, sliced
30g flour
A pinch of salt, pepper, ginger, nutmeg
600g water
300g Williams pear (not very ripe), chopped into small pieces
15g fresh lemon juice
150g Galbanino cheese* or similar, cut into slices
Olive oil
Optional: finely chopped parsley (I haven't used)

* Galbanino is a solf, mild Italian cheese which melts in the mouth. It is not salty or strong. It melts great in he oven. If you like you can use another kind of melting cheese up to your taste, mozzarella, provolone, cacciocavallo...etc.


Preparation:
    Mix flour, salt and spices in a bowl.
    Coat chicken slices with flour mixture, shake off excess flour, place them in Varoma Bowl and Tray.

    Put water in TM Bowl. Steam for 20-25 minutes at Varoma Temperature on Speed 1.
    Transfer chicken slices into an oven tray.

    Empty the water. Place chopped pear and lemon juice. Cook for 7 minutes at 100ºC on Speed 1.
    Spead pear over chicken slices.

    Place cheese slices on the top

    Drizzle with a little oil, bake for 10-15 minutes under the grill.
    Sprinkle with chopped parsley and serve.

My husband and I really enjoyed the dish.

During our 3 days trip I took so many wonderful pictures I almost started thinking what if I start another blog on travel ! ;)
Even if the photos have nothing to do with a food blog, they were too pretty not to share so I did.

And I wish and hope someday you'd all have the chance to see those places with your own eyes. Why not?? Who knows !?!
You know the photos can tell only a fraction of the places.

Thanks for this recipe Farfallina - it will be great for visitors, something a little different.   Love the photos, beautifully set out too.

I am happy you enjoyed it as we did
I must accept that it is not a very common combination, neither for Turkish nor Italian kitchens
When I first tried the recipe I was very curious about the result
Now we both know ;)
