Hi

I made a sunflower and sesame seed loaf today and though it tasted good and we've almost wiped it off I noticed a few flaws.

1. The loaf cracked on a few places
2. Was slightly dense

I read through the tips achookwoman has posted on this forum, but it didn't really apply to my loaf as it didn't have yeast or eggs - so technically didn't expect it to rise much (apart from the baking soda I added).

Could it be due to over mixing? It's a converted recipe so do you think I should give it a go again but not mix as much this time around?

Any tips and hints are greatly appreciated.

Was it a soda bread? If it was the whole technique with one of them is to literally bring it together and not mix too much. I just thought with the fact you didn't add egg or yeast but added baking soda that it sounded like a soda bread.

I agree,  probably over mixed.

No not soda bread.

Heres the recipe
Ingredients:

110g brown rice flour
75g buckwheat flour
100g arrowroot flour
1 tsp bicarb soda
2 tsp cream of tartar
rind of 1 orange
80g sunflower seeds
35g sesame seeds
40g linseeds
2 tbsp mixed nuts
1 tbsp honey
280-300g almond milk or any other milk of choice

Method:

Preheat oven to 180 degrees fan forced.

Put the seeds and nuts into the TM bowl and mix for 8-10 seconds on speed 8-9 until ground into meal. Do not overdo it, keep checking.

Add the other dry ingredients and the orange rind and mix for 10 seconds on speed 5 to combine.

Add the wet ingredients and mix for 8-10 seconds on speed 4 until it all comes together. The batter shouldn't be too dry, similar to gluten free bread dough.

Pour into greased or lined loaf tin and bake 45 minuted or until cooked through.

Serve warm with topping of choice.

So it is really a gluten free loaf.  I think that given the ingredients,  it will be extremely difficult to get just right.   But will be well worth the effort.  Last year , a friend wanted a cake that was low fat and sugar,  low egg and had vegetables in it.  I made a Zucchini cake but after 3 attempts had to use apple pulp to bind it together.
