I have never made Chilli Con Carne before but I thought I would try this in my effort to make healthier food.

I love how it is a 'one pot' meal with minimum cleanup. It probably doesn't look that appealing but was quite nice with the chilli powder adding a good touch of spice. I reduced it though which was good for me but hubby needed more. I like how this is a healthy meal that contains a few veggies and is quick to prepare without much effort.

You really need the corn chips to go with it for maximum impact. Will make again.

I make this recipe a lot too as the kids just love making their own tacos/nachos. I follow the recipe but reduce the chilli a bit for the kids and add frozen corn kernels in with the kidney beans at the end too, to give it some more colour!
