I'm not sure if this is the right place to post this - moderators, please put it in the right place if need be . .

I absolutely adore kaffir limes . . .not a great fan of masterchef - but was looking over their website tonight and this is what I found . . .

Thans goldfsh, we ave a kaffir lie tree, no fruit this year, hopefully next year. The keaves are great to ave.

Thanks Goldfish, My Mum and Dad have a kaffiir lime tree, I raid it often..
My Thermomix,  Kitchen Aid, Pizza oven, Nu Wave 5 in 1, Spatulas, all brings love, laughter, happiness, and great food  to my kitchen.

Two recipes in the Fast and Easy Indian Cookbook come to mind - Lime Pickle p.132 and Lime Chutney p.134.

The kaffir limes are really sour little things with (obviously!) a really pronounced 'kaffir' flavor. I think you may need to dilute it a bit with normal limes or lemons if you make chutney as they are really astringent and powerful -just think how much flavor you get from a couple of leaves in Thai food! My tree fruited last year but I only used some zest.

I planted a tree last year, no fruit yet but big enough to use the leaves. I'm lucky enough to have a Thai DIL so I get lots of Thai cooking done for me.

Can someone tell me please, when a recipe calls for 1 kaffir lime leaf - they do mean one of those double leaves don't they?

Yes, just one double leaf, don't forget to take out the centre vein before your very finely slice it up.

Thanks girls.  I didn't know about removing the vein Brenda and my leaves certainly don't look nice and glossy like that link gf  ;)

Neither do mine, Judy.  Mine are darker and not too shiny at all . . .but they're brilliant in Thai curries, etc.
