CC, what recipes did you use for the crust and meringue? I've never made lemon meringue pie before (nor any other meringue dessert), and would love to give it a shot 😃

Astarra,  you have made my day.  i used to make this when the kids were little as it is very economical.  It isn't as thick and rich as Tenina's or my other recipe,  but the kids do seem to like it.

I used Rich Shortcrust Pastry for the pastry case.Rolled it out to fit my tin, rested in the fridge for 30 minutes.I then lined with making baking paper, weighed down the paper with baking beans and baked blind in the oven.
I never have much success with whipping meringue in the TM so used my hand whisk to whip two egg whites in a grease free bowl until very stiff. Then I added,a teaspoon at a time,100g of castor sugar, making sure each addition of sugar is throughly whipped in.
There is a Lemon Meringue Pie recipe in the EDC page 174.
There is also a recipe here for Lemon Meringue Pie. ;)
Any more questions just ask BZB :-*

Thank you CC 😘😘

I have everything except custard powder 😦 Will use the lemon component from the other recipe, I think. But it's not Chookie's 😢

How much time should I set aside to make it? My mind is clicking, clicking....excited! 😄😋

Unfortunately there is a lot of resting time for the pastry but the other parts of the recipe are fairly quick. ;D It's very hard to say the exact amount of time it took me ???
