Hi - I found this recipe on taste.com.au (link below) and then more or less used the TM Choc Salami recipe to convert this to TM, as below. Made today and just sampled it - incredibly rich but yummy!
Rum & raisin chocolate fudge squareshttp://www.taste.com.au/recipes/14753/rum+raisin+chocolate+fudge+squaresIngredients • 60ml (1/4 cup) rum
• 95g (1/2 cup) raisins
• 400g dark chocolate
• 1 x 395g can sweetened condensed milk
• 50g unsalted butter
MethodLine a 20cm (base measurement) square cake pan with non-stick baking paper. Combine the rum and raisins in a small bowl. Set aside for 1 hour to macerate.
Add butter to TM bowl. Melt for 2 mins, 50 degrees, speed 2
Add chocolate to TM – 3 mins, 50 degrees, speed 2
Add condensed milk to TM – 6 mins, 50 degrees, speed 2
Stir in the raisin mixture (I did this in by hand in the TM bowl).
Spoon into the lined pan and use the back of a spoon to smooth the surface. Set aside to cool. Place in the fridge overnight to set. Cut into squares.
Note: suggest using 1.5 times recipe (fits in TM) as this fits nicely in a small slice tin.
Some lucky people will get these for Christmas!
