Ingredients:2 grated potatoes 225 g approx
1 finely sliced leek or 1 grated onion 125 g approx. ( squeeze potato in tea towel to remove excess water)
50g SR flour
2 large eggs
S and P
3 rashers streaky bacon, diced

Preparation: grate veg and mix altogether in a bowl and shallow fry until golden brown and cooked through.
Put spoonfuls in hot oil and push down with potato masher. I lightly browned and put on baking tray and finished in oven 190'C
I used rice bran oil. Traditionally lard or dripping was used.
Photos:Tips/Hints:Very good with scrambled eggs. Makes bacon go along way.
