Cakes that can be made in advance & frozen...?

Dear all
I have a busy November coming up with school events requiring goodly amounts of baking. Do any of you have any tried & tested recipes for cakes and/or cookies/biscuits that you know can be frozen & defrosted successfully? This is so I don't have to do yet another marathon baking session till the small hours.
The cake & cafe at our school does a great job and I like contributing - it's just a little more difficult when my DH is in the country as he'd be questioning the whole 'baking all day and *all* night???' mentality that I would have got away with if he couldn't see what was happening!

Have you looked at Uni's freezing list? Might have some ideas.
I think most cookies and muffins can be frozen, I do the ILB choc cake into muffins, they freeze well for school lunches etc.

My bannana cake that is on the forum can be frozen. I don't ice it until it is defrosted.

Somewhere on here Stef posted a recipe for a cake cooked and stored in a jar - I cannot find it at the moment but maybe Stef will see this post or someone else will remember it and post the URL for you.

I freeze all cakes, muffins, slices and have even frozen biscuits at times.

Most cooked cakes can be frozen, most uncooked biscuits can be frozen. Some cooked biscuits can be frozen. You can make up , say a choc chip biscuit recipe, form the biscuits on a tray, freeze them, put them in a plastic bag, still frozen in the freezer, When you want biscuits, take them out , put frozen biscuits on the baking tray, and either cook them from frozen, adding a bit more time, OR let them thaw on try a bake them. This is a good way to have fresh biscuits when you need them.

I freeze ILB chocolate cake all the time. Pretty much any cake freezes ok uniced. Just defrost and ice on the day!

You can also freeze buttercream separately from the cake, then take both the cake and the icing out of the freezer at the same time, and Ice the cake when they have both defrosted.

I have even frozen iced cupcakes left over from a party, and they thawed out really nicely. I probably wouldn't intentionally ice and freeze them in advance, but would definitely make and freeze cake in advance. Bimby's chocolate cake has become my favourite 'birthday cake' recipe and it freezes very nicely.

l have successfully frozen bimbys choc , banana , orange , any cakes really
l freeze raw biscuit dough in balls the defrost and bake
also when l dont want to bake so much theres lots of recipes for no bake slices and there quick and yummy to too

I have frozen I love bimbys choc cake.
My banana cake on here, i freeze all the time.
Most biscuit doughs can be made, rolled up in glad wrap and frozen in advance too.
