Using MC with Butterfly?
« on: October 31, 2012, 08:18:57 pm »
Hiya

Sorry, this is a really dumb question.  When using the Butterfly, the MC doesn't fit (it touches the top of the butterfly).  Are you supposed to leave it off when using the butterfly, or just use the MC the other way up?

When you are using the butterfly have the MC the other way up and, whatever you do, don't go past speed 4 when using the butterfly or you won't like the resulting bits of plastic scattered throughout your mixture!

The MC is not required for all operations.  Often, when you are using the butterfly, you leave MC off - eg to get more air into whippped cream, beaten egg whites.  Some people prefer not to have the MC while making butter because when they feel the moisture on their hand over the hole in lid, they know the butter is ready.

Some people like to cook their risottos with the butterfly in place so, as Cuildh said, turn it the other way up helbels.  You can also put the steaming basking on top of the lid to stop splashes, eg when making a sauce which you want to thicken and reduce.

Any time, Helbels, just ask and we will (hopefully!) answer.
