Help Me Convert A Recipe
« on: November 02, 2012, 02:45:22 pm »
If you are scratching your head on how to convert a recipe - ask for help, post the whole recipe here or a link to the recipe. We'll do our best to help you. You may have even converted a recipe so far, and then need some help. We want more people to post new recipes so don't feel intimidated by the "silliest question" or the most difficult conversion. At this point in time, we have 8,000 brains to assist you which just makes fun of the old saying "two heads are better than one". Once you are happy with the conversion you can trial it and if its successful, post it under the appropriate section. Go for it!

Great idea CP! I was only thinking the other day that we need a thread like this.

I'll go first.....if someone can convert this for me or get it somewhat similar that would be great!

Alison's Penang Chicken from Michelle Bridges 12wbt

Ingredients
1 tablespoon red curry paste
600 g (21 oz) chicken breast fillets,
cut into strips
400 ml can Light & Creamy
Coconut flavoured evaporated milk
2 teaspoons fish sauce
2 tablespoons brown sugar
2 tablespoons crunchy peanut
butter
250 g (8.8 oz) broccoli, cut into
florets
150 g (5.2 oz) snow peas, trimmed

Alison's Penang Chicken
Serves: 6 | Prep time: 35 min | Cooking time: 10 min | 297 Cal per
serve
This tastes just like it came from a restaurant - but healthy!!My
family adore it....
The recipe serves 6 so some to freeze for another meal or two.
Method
Heat a large non-stick frying pan over medium heat. Add the curry
paste and cook, stirring, for 1 minute. Add the chicken and stir to coat
in the paste. Add the coconut milk and cook, stirring often, for 2
minutes (don't let the mixture boil).
Add the fish sauce, sugar and peanut butter. Stir until smooth. Simmer
gently for 5 minutes or until the chicken is cooked through (don't allow
the sauce to boil or it will separate).
Meanwhile, cook the broccoli and snow peas in steamer set over a
saucepan of simmering water for 2-3 minutes or until tender crisp. 
Divide the chicken, sauce and vegetables among serving plates
Mish Tips
I like this recipe served with half a cup of cooked rice which adds
94 calories to the serve per person

Tasty, often if you do a bit of research on the net eg google Penang Chicken Thermomix, you will come up with something close to what you are wanting.  I came up with this one on RC which will fit the bill  - just substitute the ingredients from your recipe but use this one as a guide.

Can I make buttercream in the tmx.
My standard recipe in a bench mixer is beat 125g soft butter until as white as possible then beat in 1 1/2 cups icing sugar followed by 1 tab milk. Then color. I need it stiff enough to pipe onto cakes.
I tried beating butter in tmx sp4 with and without butterfly. Felt like I tried for ages and no color change. In fact I thought the butter was going to melt so tipped it into mixer and used my usual method. Can anyone help please?

Kim, have a look at this recipe on MJ's blog or there is one here on the forum.
I have posted this one on the forum as well but it looks like the one you have tried. Our very clever cake decorators may come to your aid with something else.

125g butter at room temperature
180g pure icing sugar
2 tblspns milk
2 tblspns cocoa

Butterfly in, speed 4, check then scrape down and mix until mixture looks right.

Thanks JD will look a bit further. The main problem I have is the mixture needs to be as white as possible (no cocoa) so that the color I add works. If the mixture is a bit yellow you can't seem to get the right color finish.

The link that CP posted is the one that maddy uses a lot and adapts with different flavours. Proabably a good one to try if you like buttercream.
