Request for Christmas Cookie - but no egg!
« on: December 11, 2012, 08:15:17 am »
The parents at school gave the staff some lovely baked Christmas goodies and among them were some heart shaped biscuits - almost like a mild gingerbread.  One of the people I work with cannot have eggs and she is after something very similar, but without the egg . . . . can anyone help with a recipe?

Thanks - she's a lovely lady and it would be good to find her something . . . I've searched but not come up with anything yet.

GF, the melting moments biscuits that are on this forum (maybe they are called custard biscuits) are egg free and absolutely divine.  Maybe you could replace some of the sugar with the sugar and spice mix from Tenina's christmix book in them to get a Christmassy flavours?

Thanks, Snappy - and an excellent idea about the spice mix.  I'll give it a go!   :D

I think I might give it a go too GF!  As I was replying I thought it sounded delicious!

Just checked out the Sugar and Spice mix and if doing it for this recipe I would use caster sugar rather than the muscuvado.
