Spiced Nuts?
« on: December 01, 2008, 02:46:30 pm »
Help!  Somewhere, I think on a blog, I saw a recipe for making very delicious sounding spiced nuts in the TM.  I was sure I'd left the tab open, but now I can't find it  :(  I've just wasted 20 minutes trying to find it again.  Has anyone else seen it?  Or got a recipe of their own?  Hope someone is able to help me.
As my picture shows, I've suddenly become younger :-)  DD was of the opinion that her picture should be here, not mine!

Just saw this
CW - this was a recipe posted by JulieO in the What are you cooking today thread

I was given a jar of these last week and they are really good!!  Not a TMX recipe - but fabulous!  Hope it's ok for me to "repost" the recipe here as it was "buried" a little in the thread . . . .Thanks Michele!!

Yesterday I made these spiced nuts which taste really nice.  The recipe came with the new spice grinder that I've just bought to replace my 18 year old one which is still working, but the blades are getting a bit blunt.

I will post the recipe in case anyone would like to give it a go.

SPICED NUTS
Substitute different nuts and spices for the ones suggested if liked.

1 whole cinnamon stick, broken into pieces
2 star anise
1 whole nutmeg
¼ tsp whole cloves
170g pecans
160g almonds
140g walnuts
50g brown sugar
1 ¼ tsp table salt (I didn't use as much as this)
pinch cayenne pepper
1 large egg white, lightly beaten until frothy

Preheat oven to 160C. Line a rimmed baking tray with baking paper; set aside.

Place the cinnamon, star anise, nutmeg and cloves in a spice grinder.
Pulse a few times and then process until finely ground.
Empty into a large bowl.

Add the sugar, salt and cayenne to the large bowl; toss to combine.
Add the nuts, mix to combine and then add the egg white and mix until all the nuts are coated.
Spread evenly on the prepared tray and place in the preheated oven.
Bake, tossing every 10 minutes, for about 30 to 35 minutes, allow to cool.
Place in a glass container.

We had a bowl of spiced nuts in tapas bar yesterday and I was thinking I must make some.
Now I don't need to search for a recipe. Yum  :)

Oh I'd forgotten all about these, they are nice aren't they.  Must make some more.  Some times I completely forget things I've made until someone points it out.  :-))

Here's the photo to go with.  :D
