I have found an excellent knife sharpening service here in Melbourne (and they are also in Sydney so I am assuming they are just as good up there as they are down here).
It is a shop called Chef’s Armoury. I ruined my lovely Japanese laminated knife many years ago and chipped a chunk c. 3 mm out of the edge. I couldn’t entrust the knife to one of the usual knife sharpening services as I believe that the grinders they use run too hot for laminated blades and that isn’t good.
Anyway, I sent my knife off to the Melbourne shop to be sharpened and it came back perfect a couple of days later. I just wave it at a tomato now and the tomato (almost) slices itself! I know you don’t believe that that’s a bit of an exaggeration, but you get the idea. Cost was a modest $40.00, which I thought was pretty good to get my good knife back and working properly again.
