Strawberry Crumble

Strawberry Crumble:
Number of People: 4
Ingredients:
40g almonds
40g pistachios
1/2 tsp cinnamon
5 fresh plump dates pits removed
1tsp vanilla bean paste
500g strawberries tops removed

Preparation:
Place almonds, pistachios, 3 dates and cinnamon into  *:  lock lid and pulse with turbo button until mixture forms crumble like consistency. Set aside.

Place 250g strawberries remaining dates and vanilla bean paste into  *: 30 seconds speed 9. Mixture should be smooth. Cut remaining strawberries in half or quarters depending on size. Mix puree and cut strawberries together. Serve topped with crumble mixture.

Tips/Hints:

Dates should be plump and soft. Only use fresh dates, dried dates will not work. I served them as they were but a little whipped cream on top would go nicely.

That sounds like a nice simple and tasty recipe.  Did you use Medjool dates?

Unfortunately I have never seen fresh dates being sold here ( well not where I shop :D)

CC, if you can't get Medjool (fresh) dates and you wanted to try this recipe, you could try soaking dry dates in hot water for 10 minutes then drain.  Might be a worthwhile experiment (especially if strawberries are cheap over your way at the moment).

Cookie, how do you think this no cook custard would go with it?  I got it from the HealthyChef blog and immediately thought of this recipe.

Blend the pulp from 1 mango with 1/2 cup coconut milk and the juice of 1/2 – 1 orange depending on thickness.

Marina I think the no cook custard served over strawberries topped it with the crumble from this recipe would be devine.  :)
