Cajun Spice

Spicy,  tingly & delicious.

We had this on chicken pieces on the bbq. Enough for 1 small chicken.
From The  Big BBQ  book, changed slightly to ingredients on hand :)

2tsp  onion powder, I used onion flakes
2tsp paprika
1 1/2 tsp salt, I used 1/2 tsp
1 tsp garlic, I used 1 large clove
1 tsp dried thyme, I used 4 fresh sprigs
1 tsp ground black pepper, I used 1/2 tsp
1/2 tsp ground white pepper
1/4 tsp ground cumin, I used cumn seeds

I also added 1/2 tsp fennel seeds

Blitz on turbo a few times.

Rubbed on chicken with some evvo & left for a few hours before cooking.

Also made a batch up to take away for chicken or cajun veggies :)
