Spicy Vegetable Muffins
INGREDIENTS
280gms self raising flour
3 tsp curry powder
salt and ground black pepper to taste
200gms of mixed vegetables (I used zucchini, carrot and pumpkin)
125gms of cheddar cheese
90gms of butter melted (I do this in the microwave)
1 egg lightly beaten
185mls milk
METHOD
* Pre heat oven to 180
* Place flour, curry powder, salt and pepper in
and sift sp6 for 5 secs - set aside
* Place cheese in
and grate sp7 for 10 secs - set aside with flour
* Place vegetables in
and grate sp7 for 8-10 secs
* Add flour and cheese back into vegetable mix and combine
sp4 for 10 secs
* Add the melted butter, milk and egg and mix until just combined
sp4 for 10-12 secs
* Spoon mixture into prepared muffin tin - bake for 20 -25 mins
