Apple Walnut LoafIngredients125g butter
220g caster sugar ( I reduced this to 150g)
2 eggs
3 medium red apples, peeled and cut into pieces
175g walnuts
35g SR flour
110g plain flour
1 teaspoon cinnamon
1/4 nutmeg
PreparationPreheat oven to 160 degrees.
Prepare a loaf tin, approx. 9cm x 23cm.
Place butter and caster sugar into bowl. Beat 3minutes, speed 3, scraping down frequently.
Add eggs one at a time and beat speed 4, 10 seconds.
Add in walnuts and apple pieces. Speed 3, 5-10 seconds, until combined.
Add flours, spices and a pinch of salt.
for about 1 minute. Then combine yourself using a spatula.
Place into the prepared tin and bake for about 1 hour. Leave 10 minutes before turning out.
