I'm thinking of making this for my niece in her TM21. Since it doesn't have reverse, should I use the butterfly? Just wondering if the chicken would get all caught up in the butterfly.

I really want to make something that shows her how versatile it is. She's not using it.  :o
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

MJ could she steam the chicken in the Varoma and gently stir it through the risotto by hand?

Made this again for dinner last night. DH and I loved it and there was enough leftover to freeze for DH when I am away later in the month. We don't have it often as DS dosen't like risotto.

I made this last week and it was delicious  :)

I had about 3 heaped teaspoons of Valcom red curry paste, so used that with one of my home grown red chillies. It had a nice kick.
I sliced the red capsicum and added it about 5 mins before the end of cooking time, along with chopped snow peas, mushrooms and zucchini. All the veggies stayed crunchy, even after being in the thermoserver.

It made enough for 3 dinners the first night, 2 lunches the next day and then another 2 dinners that night. I was sorry I didn't have enough for lunch the next day too!  :D

Thanks for a great recipe, Maddy - a new favourite!

Sue

This certainly sounds as though it is good.

Finally made this tonight. Well sort of...
Didn't have any red curry paste, nor the ingredients to make it. Did find some tandoori paste I wanted to use up. So in it went and the result was delicious. Great easy to follow recipe. Can't wait to try it with the correct paste next time ;)

Love Thai food but would never have thought of a Thai risotto

Had ths tonight but with green curry paste and added diced capsicum and snow peas 3 minutes before cooking was finished.
It was nice but not a dish that wowed me. I would much rather have a Thai chicken  curry with rice. DH enjoyed it but agreed that he wouldn't choose to have it again.  Can't really fault it as such but just not for me. I guess I am a purist when it comes to Italian food and Asian food.
