St. Nicholas Speculass - Devil of a cookbook - pg.144

This recipe is  not  traditional speculass by taste or by colour, but a nice biscuit anyway, with mild spice & a hint of lemon.
The dough is quite soft, so 30 mins wrapped in glad wrap & in the fridge made the rolling and cutting easier   ;)

They look lovely Maddy. Lots of them and I love the Dutch windmill.

Hi Maddy, where did you get the windmill mold from????  I love it.   I haven't made this recipe yet as seem to always stick to the one I was given by a Dutch friend.  When I was in Holland and Belgium last year though I was surprised that you can buy several types.  They differed in colour, some being very blonde.  I was told in a bakery that the recipe often differs house to house so perhaps the one in the Devil Book is one of these "house" biscuits.  Glad it was nice though and must give it a try.

She has lots of different stamps.

My parents have authentic speculass wooden moulds, so looking forward to trying other recipes using them too  :)

Thanks for the info Maddy.  Have you tried the recipe I posted?  Did that taste more of what you are used to?

I haven't tried your recipe yet Trudy, as I'm still trying to find ground aniseed....hopefully I'll get a chance this side of Xmas  ;)
