My brother is coeliac and I find the best thing to do is look at a suitable menu then make it gluten free.
Probably avoid gf pasta as it can be tricky depending on brand, you might get gluggy pasta.
If using cured meats, read the packagibg (Hans brand is usually gf)
Cheese plate/dipsis good, provide rice crackers/gf crackers for everyone to avoid contamination & also so the gf guest doesn't feel different. Check flavoured cheese labels or stick with simpler ones.
My tried & true when he is coming over is lasagne with gf pasta sheets (from Coles or WW) and using the White Wings brand gf flour (it's fab).
Risotto would be good too.
Mexican dishes are often good. Chilli con carne with corn chips, rice, guacamole, etc.
Sticky date pudding with above mentioned flour.
Pavlova/Eton mess
Avoid soy sauce (except Fountain brand)
If you are using cornflour, check that it is not wheaten cornflour (many are, read the ingredients)
Have a box of Magnums in the freezer
Lindt chocolate is a no no.
