My favourite Sorbet - Mint & Mango

Name of Recipe: Mint & Mango Sorbet
Number of People: few
Ingredients:
150grams of sugar (or to taste)
small handful of mint
4 cheeks of mangos (2 mangoes)
60grams coconut cream
1 egg white (optional)
ice cubes (2 x trays)

Preparation:
Blend sugar 10sec on speed 9

Add mint and blend for avout 5secs on speed 9

add mango cheeks, egg white and 1 tray of ice, and turn slowly to speed 10.

Add remaining ice after 20 secs. Use spatula to help, and then add the 60g of coconut cream and blend for another 20secs...


Tips/Hints:

This is now my favourite sorbet, so summery and reminds me of sitting by the pool.. hahaha. beautiful

This was shown during a cooking class in Kalamunda, Western Australia. Recipe was taken from www.dorindahafner.com from Dorina Hafner.

I just made this....its delish....but when I was putting the icecubes in straight out of the ice cube container in the freezer, an errant plastic water filled ice cube made its way into the TM bowl......ive found a few bits of plastic but not enough to make a whole cube!!

Good lesson to pass on - I often worry when I go to add things from a metal spoon or similar that may drop down the hole - probably best to either stop the machine or pour in from the Measuring Cup.  And check what is in the ingredients you are adding.

I nearly dropped a couple of star anise into the mix after I had made some stock and was adding to a soup while the blades were turning - fortunately it hit the lid - probably should have placed the MC and poured onto the lid  :-[

Just made this sorbet. So decadent and refreshing! Will definitely make it again!
