Does anyone have a method for cooking carbonara?

This is an Italian recipe from the Cookaround forum :

My translation and then the original:

Spaghetti alla carbonara

Ingredients:
100 gr. of guanciale, pancetta or bacon, 1 tablespoon oil, 1 tablespoon white wine, 1 clove of garlic, 1 onion, 4 eggs, 40 gr. pecorino cheese, 40 gr. parmesan, ground black pepper and salt


Cut the bacon into cubes. Place the Parmesan and pecorino into TM bowl and grate for 20 sec. on speed turbo (or however you grate parmesan - speed 8?). Add eggs, salt and black pepper and mix for 20 sec. on speed 4 and then place it in a serving bowl.

Without washing the TM bowl, add garlic and onion, and mince for 10 sec.on speed 6, add the bacon & oil, and let cook for 3 min. at temp. 100, speed 1  Through the hole in the lid, add a spoonful of wine and let it evaporate for 1 min. at temp. 100, speed 3.

When the noodles are cooked and well drained, add the noodles into the serving dish and add the contents of the TM bowl.

Stir vigorously and serve.

Note: This is the recipe with the amounts set by by the traditional cuisine: following the modern trends of food you can decrease the number of eggs without affecting the taste.

(The heat of the pasta will cook the eggs, but if you prefer, add the egg/cheese mix to the TM bowl with the bacon and onions for a minute or so to cook them through before adding)

Note - this is traditional and there is no cream !!  ;) ;)

Spaghetti alla carbonara

Ingredienti:
100 gr. di guanciale o pancetta tesa; 1 cucchiaio di olio; 1 cucchiaio di vino bianco; 1 spicchio d'aglio; 1 spicchio di cipolla; 4 uova; 40 gr. di pecorino; 40 gr. di parmigiano; pepe nero a volonta'; sale q.b.


Tagliate il guanciale a dadini. Grattugiate con Bimby pecorino e parmigiano, portando le lame per 20 sec. a vel. turbo. Aggiungete le uova il sale e abbondante pepe nero gia' macinato: 20 sec., vel. 4 e versate poi il tutto in una bella zuppiera. Senza lavare il boccale, inserite l'aglio e la cipolla, e tritateli per 10 sec. a vel. 6; unite il guanciale, l'olio, e fate rosolare per 3 min. a temp. 100, vel. 1; dal foro del coperchio aggiungete un cucchiaio di vino e fatelo evaporare per 1 min. a temp. 100, vel. 3. Quando gli spaghetti saranno cotti e ben scolati, versateli nella zuppiera e terminate di condirli con il contenuto del boccale. Mescolate energicamente e servite.
Note: CONSIGLIO: questa è la ricetta con le dosi proposte dalla cucina tradizionale: seguendo le moderne tendenze dell'alimentazione è comunque possibile diminuire il numero delle uova, senza che il gusto ne soffra.

One suggestion would be to use Reverse when cooking the pasta shells.

I loved this recipe. I much prefer it to the cream versions but that's probably a personal choice. My two and four year old devoured it. Thank you!
