I want to make Chelsea's Honey Baked Pumpkin Risotto.  Is it possible to make half quantity and if so how much water do I use?  I think I read somewhere about not reducing the liquid in risottos but wouldn't this make the risotto too runny

It has to Margaret.  I though you just didn't reduce the cooking time with half quantity  ???

Thanks Judy.  I might just reduce the liquid a little bit.  Full recipe would be far to much for us.

I always make a full batch of risotto and use the leftovers for Arancini.
