Sunbutter
«

Anyone got a tried and true tmx recipe for sunbutter, or a spread that uses mostly sunflower seeds? I have tried a couple of recipes and have not had much luck. I have nut butter recipes but sunflower seeds seem to be very different to work with
Any advice would also be appreciated
TIA

I guess you have googled it. I did out of curiosity and the only information I came up with is that it takes 10 or so minutes and you have to keep stopping and scraping the bowl down.

Djinn I, I also Googled. I think you may need to use a lot of seeds to start with. 3 cups in one recipe. Don't add oil or honey until after meal has formed.
I tried to make tahini with sesame seeds and ended up thinking it was easier and cheaper to buy. Not suggesting you give up. In fact might have a go. Love nut and seed butters and so good in dips.

Thanks Chookie and CC.
The recipe on here has been the best one so far (I used honey instead of agave). I added extra oil until the consistency looked right but it dried as it chilled. I'll try blitzing just the seeds first next time Chookie and see if that makes a difference. Does that stop the mix drying out?
I love the sunbutter on toast with banana, with apple and crackers or with carrot sticks.

I have made tahini before and didn't find it too much trouble. You can often find big bags of sesame seeds in Asian grocers. To make it easier to get the tahini (or any nut butter I guess) out of the thermomix I heated it to 37 until it was runny, easy to pour out before it cools and thickens. I like to make it fresh as I always worry it will go rancid unless used up quickly.
