Recipes to use up old jam

I have been spring cleaning our pantry, and found several jars of homemade jam from 2 or 3 years ago.  They aren't mouldy, but have big, hard sugar crystals on the top of them.   Does anyone have any good recipes (TMX or not) for using up jam?  Things like jam drop biscuits or things like that?   Any slices or puddings?  I don't want to waste it, but we have heaps of jars of newer jam to use as well.

There is a recipe in Tenina's new book - jam popovers. I've not made it, but it looks nice.

Chookie's Belgium lemon teacake would be a good one, you could use any jam for that. Jam tarts are nice, like a fruit mince pie but with jam and without the pastry lid.

You could also stir some through rice pudding or ice cream, or thin down with hot water and add to jellies or trifles.

You could also make it into a tea....we always used to have black currant tea when we had colds as kids. Just a spoonful of black currant jam in a cup with boiling water poured over, then strained. Or let it cool and use it as cordial.

Judy posted a recipe for icecream using jam.  I've made it and the boys loved it.  I can't get the link to paste but it's called Quick strawberry jam ice cream.  http://www.forumthermomix.com/index.php?topic=12511.0

Linzer torte is another of our favourites.  You could also make up mini jam tarts using your preferred sweet pastry recipe and fill with jam, then bake.

Jam tarts are always popular here as are jam drop biscuits. Steamed puddings with jam in the bottom. ( not quite the weather though).
I have stirred jam through vanilla icecream and it has been successful.
May all dairy items in your fridge be of questionable vintage.

This is an old recipe that I make when the cupboard is bare. It's quick and easy and the muffins are good for lunch boxes. They freeze well too. This is the original recipe. (Don't know where the recipe is from). Makes 12 muffins

Jam muffins

1/2 C jam
2 eggs
1/2 C raw sugar
1 C sour cream or yoghurt
60 g melted butter
1/2 C coconut
1 1/2 C SR flour

Preheat oven to 180 C
Whisk eggs and sugar until frothy
Stir through sour cream and butter and mix well
Fold in coconut and flour
Half fill muffin pans with mix, put in 1 teaspoon of jam in each, then cover with remaining mix
Bake 15 to 20 mins until golden brown.

add jam warmed up and make a trifle for desert.

You could spread the jam to the bottom of a cake tin prior to putting cake mix in. Then when turned out, it has a tasty topping or make 2 sandwich tins for a Victoria sponge.
I fancy some cake now.
