A friend has just given me 3 huge bundles of spring onions. Any suggestions on what to do with them other than in a salad.

Mab, if you wrap them in newspaper or thick brown paper, place in crisper in fridge , they will last for at least 2 weeks.
Very nice in Chinese Stir fry. fried Rice, as garnish on soups. you could do with Eat Your Books.!!!

Use then in dumplings, meatballs and risotto (such as Chelsea's garlic prawn risotto) instead of normal onions.

Chop them and dry them in the oven them freeze or put into a jar.

I do much as Gert does, chop them and freeze them in an old drinks bottle or similar then sprinkle them out as an when you need or want them.
