Bacon and Pumpkin Pesto Pasta:Serves 4-6:Ingredients:1kg kent pumpkin
EVOO
400g pasta
300g bacon
125g basil pesto ( I made mine according to Tenina's recipe. Could use EDC)
Shaved parmesan to serve
Preparation:Cut pumpkin into 2.5cm pieces, spray with EVOO and roast in AF, or oven.
Cook pasta in thermomix according to the EDC instructions.
When pumpkin is cooked place in thermoserver.
Add pasta when cooked. Stir through pumpkin.
Either cook bacon in AF or microwave and cut into strips. Add to thermomserver. Stir.
Add the pesto and stir through. Season with salt and pepper if you wish.
Serve with shaved parmesan.
