Quick Fix - Every Occasion Beetroot Risotto Review

Easy, yummy and impressive looking. Great recipe that I'll make again. Increased to 400g arborio, 150 wine and 850 water and easily fed 8.

I love Beetroot so I am sure that I will be making this.
May all dairy items in your fridge be of questionable vintage.

We had this one tonight and it was really yummy.
In the step where you mix the rice with the onion, garlic and oil I used Reverse Speed. Not sure if it's needed but I did it anyway...it just felt wrong making risotto without using reverse when the rice is in the bowl :)
Each serve was on a handful of rocket as a suggested accompaniment. Very yummy, I'll certainly be making it again. No photo this time as I was about 200g short of beetroot and I wanted to ensure the review was authentic.
Will be making it again.

I made this the other night with fresh beetroot out of the garden and added extra fetta ('cos I can - and I like it!) and it was very nice.
Even though my neighbour said it looked like "guts on a plate and my kids would love it"! GROSS!

Had this for lunch today, made half quantity which made 3 4 serves for me.  I used ordinary feta and should have used more as Nikkit did - when you had a piece in your mouth the hit was fantastic.  It's the feta that lifts this risotto, not so much the beetroot. I enjoyed it but I don't think I'd serve this one up to visitors. Used basil instead of rocket to serve.

Unfortunately this one did not work for us. The risotto turned out gluggy (but then again I can never work out TM risottos) and the taste of feta was just too strong for us. Maybe it's the feta that we used? Anyhow, this was the first recipe from a TM that we literally could not stomach.
