This is DHs favourite soup, he begs me to make it, have to admit it is very good. A nice winter soup! Although you guys are all in height of summer
Diet Cream of Tomato soup:4:Ingredients:8 fresh very big juicy tomatoes (only remove stem part at top)
handful parsley
1 big onion
cup of water
teaspoon salt
1/4 teaspoon sambal oelek
3 diet cheese slices
20g EVOO
1 teaspoon sugar
Preparation:Firstly blitz onion and parsley speed 5, 10 seconds, add EVOO and sauté 5 mins, speed 2, Temp Varoma. Add tomatoes, salt, sambal, and sugar chop on speed 4 for a few seconds, add cup of water and cook 20 mins, speed 2, Temp Varoma.
Allow to cool for few mins, and blitz top speed 1 minute, add cheese and blend speed 5 a few seconds. Serve.
Photos:Tips/Hints:This is such a lovely cream of tomato soup, you may like to thin it down some more but we prefer ours quite thick.
I normally make this as a starter with homemade burgers to follow with grilled mushrooms.
