Bread for campers
« on: March 13, 2015, 01:07:35 am »
For many years I have been trying to create a good bread recipe that can be cooked on a BBQ or even an open fire, when camping.
Think I have finally done it.
I used the Soft Spanish Roll recipe, you can probably use No Fuss or Cookies Vienna loaf recipes.
You need a heavy based frying pan, with lid. Best if glass so you can  see what is happening.
There are only 2 ten minute rises so the rolls are pretty quick.
The texture is also good.
Makes 10 rolls

Knead bread in TMX 4 minutes or knead by hand for 10 minutes.  The hand kneading can be done in a large bowl, ( washing up dish).
Rest for 10 minutes.
Tip onto a floured surface and form into a large roll. Cut the roll into 10 pieces.
Form into balls, placing 5 into an oiled plastic bag for the second cooking.
Place into well oiled pan , spray or dab with water, put lid on and wait 10 minutes.
Place pan on BBQ plate which has a low flame. When rolls have more than doubled turn up the heat and cook until the sides of the rolls feel cooked.
Turn rolls over and cook until bottoms are light brown.

Tip rolls out and allow pan to cool while you re roll the next lot to be cooked.
Oil the pan again, but this will be quicker as the pan will be warm.
Make sure the first part of cooking is over a very low flame.
Have a go at home first so you know what to expect.

DH will be thrilled with these. He has been trying to master camp bread for a couple of years.
May all dairy items in your fridge be of questionable vintage.

Thanks girls.  We can now cook bread in Slow Cooker, Air Fryer and on stove top or open fire or BBQ. Great fun and decent cheap bread.
