When I saw this I was wondering if you used roo. After growing up with Dad killing roos I can't bring myself to eat it.  Will try chicken, I never thought of that. Thanks.
May all dairy items in your fridge be of questionable vintage.

Easy to make and tasty.

I used chicken thigh. Cooked for 2 mins, instead of 7 mins meant for kangaroo meat. Doubled the time to 6 mins for the vege step, as the eggplant didn't look cooked. I would precook the eggplant in the microwave next time.
