Nutella Drop Banana Muffins
« on: May 10, 2013, 11:07:12 am »
These are great to do after school, only take a few minutes to make and they are delish!

160 gr Self Raising Flour
150 gr Plain Flour
170 gr milk
150 gr raw sugar
2 eggs (make 'em free rangies please!)
50 gr Olive Oil (or Canola)
1/2 teaspoon baking powder
2 bananas, peeled
1/2 cup Nutella

Preheat oven to 180 deg C

Combine all ingredients (except Nutella) in TMX bowl Speed 4, 8 seconds. Scrape down sides and use your spatula to make sure all the flour is combined (sometimes it can clump under blade) Give another blitz if you need.

Prepare 12 muffin cases.  Pour a few tablespoons of the mixture into each muffin case.  Drop a teaspoon of Nutella in the middle of each case then top with the left over muffin mix.

Bake in a moderate oven (top shelf is best) for 15 - 20 min or until golden brown and top springs back when pressed.

Leave to cool for a few minutes then consume warm.

Best eaten by pulling apart to reveal the Nutella Drop!

Enjoy!

These sound tasty. Like Judy I think  it is especially yum when there is a surprise in the middle.

I made this recipe with plain flour increasing the amount of baking powder and adding a bit of salt. I will try to make them fluffier, but the flavour is delicious, aromatic and no too sweet. Thanks for posting this recipe!
