Sour Cream Chocolate Chip Banana BreadINGREDIENTS
110gms of butter at room temperature
95gms of sugar
1 egg
2 large over ripe bananas
1 tsp. vanilla bean paste
110gms sour cream
160gms self raising flour
1/2 tsp. baking soda
10gms cocoa powder
140gms chocolate chips
50gms walnuts (optional)
METHOD
* Preheat oven to 180
* Lightly grease and line the base of a 13cm x 23cm loaf pan
* If adding walnuts, place in
and chop to desired size - set aside
* Cream butter and sugar-sp 3 for 2 minutes, scraping down sides every 20-30 seconds
* Add egg, bananas, vanilla bean paste and sour cream, combine together - sp 5 for 10 seconds
* Add flour, baking soda and cocoa powder - sp 5 for 15 seconds until well combined
* Add chocolate chips and walnuts if using -
sp 3 for 10 seconds
* Pour batter into loaf pan and bake for 50 minutes - 1 hour
* Remove from oven when cooked and allow bread to rest in the loaf pan for 10 minutes

A beautiful moist loaf, almost like mud cake.
I added the walnuts and used light sour cream.
The pan could have been smaller to achieve a higher loaf.
