Sausage casserole
This is my contribution to the comfort food challenge.
I have been cooking this casserole since my children were small (and it’s still a favourite with DS almost 17 and DS almost 21). There was a hand-written recipe somewhere but cannot find it. It’s a one pot dish that’s very quick and easy to prepare (less than 15 minutes), then into the oven while you do something else. The vegetables vary depending on what I have. This is what I used this time, but peas and beans are nice too.
Serves
4-6 (fills a round casserole dish about 27 cm across and 7 cm high)
Ingredients
¼ cup rice
1 large onion thinly sliced
2 large carrots thinly sliced
2 large potatoes thinly sliced
handful each of cauliflower and broccoli flowerettes
8 thick beef sausages (very good quality and I skin them)
700g bottle of diced tomatoes or passata
other flavourings to taste eg garlic clove, or handful of herbs, or a few chilli flakes
grated cheese for topping (about ¾ cup)
Preparation
1. Preheat oven to 180 degrees.
2. Put rice in the bottom of a large casserole dish, layer the vegetables on top, then put sausages on top of the vegetables.
3. Pour passata (with flavourings) over the sausages, cover and bake for an hour.
4. Remove lid and top with grated cheese. Bake for 15 minutes more or until the cheese browns a little.
5. Enjoy.
Notes
The sausages should be browned, the vegetables tender, and most of the liquid absorbed by the rice. Use a mandolin to make the preparation super quick (thin slice).

What an easy recipe Gayle and I guess you could sub the sausages for chicken pieces too?

Judy I have never thought to try chicken pieces in this. I am wondering if the chicken pieces would give the same depth of flavour that the sausages do? I leave that decision up to cooks who are more knowledgable than me

I made this for our dinner tonight.We all loved it Gayle.
I did cook the casserole for an extra half hour as my veggies were still quite hard at the hour mark.

I made this again last night but substituted the sausages got slices of oyster blade steak, cooked it for an extra half hour, it was very nice, I used some home made spag sauce instead of the tomato's..

I made this on Monday night for dinner add an extra half hr to the cooking time, as the veggies were still quite hard. Only had half the tomato amount, added some gentleman's relish, some chilli sauce and some tomato paste a bit of water it was delicious.

I am trying to figure out why it is taking so much extra time for you all. My oven is fan forced and I do use a mandolin to slice very thinly but even so shouldn't be that much difference. Maybe I should change the cooking time
