This recipe was posted by Bron in a recipe request so I thought I'd give it it's own thread to be easier to find

250g sugar
Orange peel (no pith) of one orange
200g of real freshly squeezed orange juice
120g butter
4 eggs
Blitz sugar 30 seconds, speed 5 to 10.
Add peel, repeat the blitz.
Add juice, butter and eggs, program 20 mins, 90º, speed 4.
Keeps for one month in a jar in the fridge.
Am going to make it this weekend Orange Meringue Pie. Will try and post pictures before the kids get to it!

I made this today and it's really lovely. DH is not that keen on lemon curd so I knew he would like this.
I prefer to use my zester so I just added the fine zest to the sugar and blitzed it for 20 seconds/speed 9. Added the rest of the ingredients and cooked as per Bron's instructions.
My oranges were from a neighbour's tree so not quite as sweet as bought ones but they were perfect for this recipe.

That recipe sounds lovely - I so very much miss butter, etc. now that DH is lactose free, I just have to slaver over all the recipes and pictures.

You can make this recipe with Nuttelex instead of butter and it will be dairy free and therfore have no lactose.
It is just as tasty made with this substitution.
I make all my citrus butters with Nuttelex as this is a dairy free home.
This is a very yummy recipe! Thankyou.

Thanks for that suggestion to use nuttelex, I was not sure whether these alternatives worked as well as (or instead of) butter. This recipe will definitely go on my to do list now.
Does this mean that you can successfully substitute nuttelex for butter in ALL recipes, i.e. white sauce, cakes, pastry, etc., or just for some recipes, Orange / lemon curd for instance? Is the substitution weight for weight?

I substitute Nuttelex for butter, or margarine in all recipes. I substitute weight for weight.
I have not had a failure yet. Nuttelex was suggested to me by a dietitian when my son was diagnosed with an allergy to dairy proteins. There is a lite version of Nuttelex and an olive oil one. I mostly just use the regular one and substitute Nuttelex where ever butter is used in a recipe. I also substitute soy, rice or oat milk for dairy milk.
I prefer Nuttelex to lactose free margarine I think it is healthier and the whole family can use it.
Being dairy free is now quite easy.

Just made this, tastes delicious.
Have made Tenina's lemon curd a heap of time but this curd does not have the same consistency, it's kind of curdled but not.
Any ideas? I didn't use the butterfly.
