Susieja, just quickly I would put the flour and salt into the bowl. Add 2/3 of the butter and use speed 4 to mix, until it is like breadcrumbs. Then add the other 1/3 of the butter and use speed 2 for 2-3 seconds just to break it up a bit. Add most of the water and use
until the dough comes together. If necessary add the rest of the water. Wrap the pastry and chill. I would then take the pastry out and do the rolling. If the pastry becomes 'melty'return it to the fridge to firm up.
