Walnut Sauce

This creamy sauce is nice with fish. pork or chicken. In fact, anything that might need dressing up a bit.
100g. walnuts
2 slices of wholemeal bread
125ml. olive oil
40 mls. vinegar
2 cloves of garlic
Cayenne to taste
Soak bread in water for a couple of mins., squeeze dry.
Process walnuts until fine.
Add everything to TMX bowl and process until smooth and silky.This creamy sauce is nice with fish. pork or chicken. .

Thanks Chookie - looks like you hit the CTRL-V (Copy) button instead of the Post button after the first lots was done.

I'm thinking it might work well drizzled over a pear & Camembert salad too.

I made half quantity of this sauce for the challenge thinking I'd have it over a piece of plain chicken fillet but changed my mind and had teriyaki chicken so I cooked up 50g pasta, added 2 tbspns of the walnut sauce, 1 tbsp parmesan cheese and 1 tbspn chopped parsley. I wasn't sure what type of vinegar to use but settled on apple cider vinegar.
It wasn't bad but I can't say I was overly keen on it Chookie, a bit too much oil in it for me I think. I have all this leftover so will have to put my thinking cap on for ways in which to use it.

Judy, I really love this sauce. Maybe it didn't like having the Parmesan added to it. It is really quite delicate. I am also very fussy about the freshness of the Walnuts. I also use Apple Cider vinegar in most recipes calling for vinegar.

My walnuts were pretty fresh and I'd put them in the freezer as soon as I bought them. Maybe if they were roasted their flavour would be more noticeable? I only added the parmesan and parsley to try and mask the oil taste Chookie, it didn't work
