Raw Carrot Dip
« on: November 29, 2012, 02:08:26 am »
This recipe came with my Aussie Farmers F&V delivery - from "Natural Naughties"

Name of Recipe: Raw Carrot Dip

Ingredients:
4 carrots
45g olive oil
1-2 garlic cloves, depending on taste
a pinch of sea salt
1/2 cup natural cashews, soaked overnight & drained
1/4 cup lemon juice
1 tsp ground cumin

Preparation:
Chuck everything in the bowl and chop at speed 5 for 3 secs. Scrape down bowl and blend by turning dial slowly up to 7, repeat until you have desired consistency.
Too easy!

Sorry no photo

Tips/Hints:
The cashews give this dip a nice creamy consistency - the colour is a little less 'orange' than other carrot dips but still looks very pretty!

I took it to a lunch last Sunday AB, and all the kids had some - seemed to go down pretty well!

Sounds good. Is it really lemony with 1/4 cup of lemon juice?

No it wasn't too lemony, I used 2 garlic cloves and found it a bit garlicky the next day!

made this to feed the crowd. Using bottled lemon juice. Gone in no time. Will make this again.

This was really nice, but I've just realised that I forgot to add the oil. Oops

Not too late ES, just mix it on low speed with the oil added.

Too late - we've eaten most of it.
I'll just have to make it again ;D
