Raw Carrot Dip

This recipe came with my Aussie Farmers F&V delivery - from "Natural Naughties"
Name of Recipe:
Raw Carrot Dip
Ingredients:
4 carrots
45g olive oil
1-2 garlic cloves, depending on taste
a pinch of sea salt
1/2 cup natural cashews, soaked overnight & drained
1/4 cup lemon juice
1 tsp ground cumin
Preparation:
Chuck everything in the bowl and chop at speed 5 for 3 secs. Scrape down bowl and blend by turning dial slowly up to 7, repeat until you have desired consistency.

Tips/Hints:
The cashews give this dip a nice creamy consistency - the colour is a little less 'orange' than other carrot dips but still looks very pretty!

Sounds good. Is it really lemony with 1/4 cup of lemon juice?

No it wasn't too lemony, I used 2 garlic cloves and found it a bit garlicky the next day!
