problems with intervaL speed
« on: December 29, 2014, 01:43:44 am »
Just wondering if anyone has any suggestions what I may be doing wrong. Every time I make any sort of dough it turns into a fine crumble. the interval speed wont kneed and just chops it up. I have watched the interval speed at work and it does 5 clockwise rotations and 1 anti clockwise before repeating.. Is this how it should work? Hoping it is something I am doing wrong and not my machine???

Yes the blades go both clockwise and anti-clockwise during the kneading process so I don't know what could be wrong.  What recipe are you trying to make Joolzz, perhaps that might be of help for us to work out your problem.  Maybe your consultant could come to your house to see what's going on, perhaps give her a ring.

I can imagine how frustrated you must feel Joolzz. Are you kneading for a longer time. I know my favourite bread recipe doesn't form a dough until about 1 minute 10 seconds into the kneading process.
As Judy mentioned, if you let us know what recipe you are using we may be able to help.

Joolz if you happen to be making pasta dough it won't come together at all during the kneading, you need to bring it together out of the TMX.

Joolzz, ,  try making a basic loaf of bread.  500 g bread flour, 320 warm water, 2 teaspoons dried yeast.  If this doesn't come together after 4 minutes kneading,( interval speed) then it is your machine that is the problem.
Not to waste the said ingredients if not kneaded,  then remove and knead by hand 20 times, then follow instructions for proving, shaping and baking for No Fuss Rolls or Isi's Protuguese Rolls.
Let us know how you go.
