Microwave Paleo Bread Recipe
This is just the right size for topping with a poached egg. The bread does not taste of almond or coconut. It does have a pleasant taste of a rich bread. It will toast under a grill but I think it will not bare a toaster. It does not have the resilience of bread to stand up to spreading anything other than the gentlest spread (think melted) but when you are a Paleo girl and fancy some instant bread, this is it! I think that I might not have had a hole in my sample (see photo) had I been more careful about putting the mixture into the mug instead of just chucking it in as I did. By the way, it goes without saying really that the mug needs to be straight sided or at least bigger at the top otherwise your bread will be the shape of the fancy mug and not come out. :-))This is intended to be eaten straight away otherwise put it in a plastic bag because without a crust it dries out very quickly.
⅓ cup (35 g) almond flour
1 Tbs (5 g) coconut flour
½ tsp (2 g) baking powder
⅛ tsp (1 g) salt
1 egg,
2 and ½ tablespoons (37 ml) ghee , melted and cooled
1. Grease a mug.
2. Throw all the ingredients into the Thermomix and mix on speed 3 for say 15 secs
3. Transfer mixture into mug.
4. Microwave for 90 seconds on high.
5. Cool for a few minutes.
6. Pop out of mug gently and slice.
Servings: Yield: 4 small round slices
