Omlet / Souffle
« on: January 12, 2009, 03:00:40 pm »
Name of Recipe: The Souffle Omlet
Number of People: 2
Ingredients:

3-4 eggs
slosh of milk (stop me if I'm being too technical  ;D )
1 dessert spoon fresh chives
1 dessert spoon fresh sage
1 leek
small handful of broccoli
A chunk of hard cheese (I used cheddar, about 5 x 3 cms)
1 dessert spoon cottage cheese
1 tomato, sliced (I'd have used 2 if I'd had 2)
salt & pepper

Preparation:

1.  Add leek, herbs & hard cheese.  Chop speed 7 (about 5 seconds?  It stopped sounding loud)
2.  Add broccoli, chop speed 3 for a couple of seconds
3.  Add eggs, milk and cottage cheese, salt and pepper.  Mix speed 5 for probably 8 seconds? (until it looked frothy)
4.  I poured into Remoska, put slices of tomato on top and cooked for about 15 minutes.  Probably use a cake tin (eg sandwich tin) in a 200oC oven for those who don't have a Remoska.  When it looks cooked and is rising up, a bit like a Yorkshire Pudding, it's done.   It's a cross between an omlet and a souffle.  Hence the title  :D

Hard to describe how completely delicious I found this.  I loved the texture.  Hope it works out just as well even if you don't have a Remoska.

Photos: (sorry, eaten it!)

Tips/Hints: 3 eggs would serve 2 people if accompanied by a salad.  Or 1 person with a VERY healthy appetite, with no salad (I was very hungry and managed abut 2 thirds of it)

As my picture shows, I've suddenly become younger :-)  DD was of the opinion that her picture should be here, not mine!

I used to make these many years ago - they were trendy.   ;D ;D

I made them by cooking gently in heavy-based fry pan and then placing under a hot grill to complete the cooking of the top.

You can make sweet ones with some sugar in mix and if not too thick, fold over with some fruit and cream in centre.  Not on the Core Plan  :-[ :-[

Made for light lunch (plus salad), enough for 2 adult and toddler.  Don't have leek and chives, decided to omit chives and used onion.   Quick, easy and yummy.  DH and DS had this with tomato sauce.  The only change I will make next time if using onion will saute, so the taste isn't as strong.

I think would be nice for school lunch box as well.
