Pumpkin and Zucchini Soup (with photo)

I just noticed that it's been quite a while since the last soup recipe I shared.

I hope you enjouy it ;)



Ingredients:
30g onion
30g extravirgin olive oil
400g pumpkin, roughly chopped
100g zucchini, roughly chopped
100g carrot, roughly chopped
200g potatoes, roughly chopped
500g water
150g milk
1 tsp Thermomix Vegetable Stock Concentrate
Salt (if needed)
Black Pepper
Sweet paprika


Preparation:

    Chop onion for 4 seconds on Speed 6. Scrape down the sides with spatula.
    Add oil and cook for 3 minutes at 100ºC on Speed 1.
    Add pumpkin, zucchini, carrot and potato. Chop for 10 seconds on Speed 5.
    Add water, milk and Thermomix concentrate. Cook for 20 minutes at 100ºC on Speed 1.
    Adjust salt and pepper. Blend for 40 seconds on Speed 8 with measuring cup on.
    Serve into plates. Sprinkle with paprika or black pepper as you prefer.

Thanks for bumping this one. I was wondering what soup to make for tonight. I have both pumpkin and zucchini in the fridge.
May all dairy items in your fridge be of questionable vintage.

I made this for lunch yesterday.  I made it exactly as the recipe said except for the stock, I used a powdered vegetable stock as I didn't have any tmx stock left.  It is a little thinner that the normal pumpkin soup with a slightly different taste.  That may be because of the zucchini in it or perhaps the stock powder I used.  DH and I both liked it and I will be making it again.

I made this to take away in the van as a light meal if we got sick of eating out;D Freezes very well.
This is a beautiful creamy soup but not too rich. We ate it with freshly baked (bought) sourdough. Mmmm easy and tasty. Thanks Farfallina.
