Smoked Salmon Potato Salad with Peas and Zucchini
Serves 4
Ingredients
1 kg potatoes
1 cup frozen peas
2 x 200g smoked salmon
2 zucchini
½ red onion
1 cup fresh parsley, stems included
Lemon Mayonnaise
½ cup whole egg mayonnaise
½ cup Greek yoghurt
2 teaspoons lemon zest
1 tablespoon lemon juice
Preparation
Peel potatoes, chop into approx. 2.5cm or 1 inch pieces and place in the steamer basket. Place in bowl.
Pour approx. 500ml boiling water over them and cook for approx. 15 minutes, varoma, speed 3/4. Check and if they aren't cooked add more time. Place into a bowl or thermoserver if you want the salad hot.
Remove the basket and add the peas into the water in the bowl. Leave them to sit for a while until thawed. Drain and add to the potatoes.
Peel the zucchini into zoodles or cut into very thin strips. Add to the potato mix.
Add the torn up smoked salmon, finely chopped onion and parsley.(I dropped my onion and parsley onto the blades at speed 7 and this chopped it nicely)
For mayonnaise, add all the ingredients into a small bowl and stir.
Serve the salad with the mayonnaise dolloped on the top

You could also use plain salmon and flake it.
