Minestrone Soup. My Way of Cooking.
I made this soup as per the recipe. I used vegetable Stock Concentrate instead of cubes. I didn't add any extra salt as the concentrate is salty.
It has a lovely flavour. I think it would improve in flavour if left overnight for the flavours to develop.
Mine has a reddish tinge as I used Beetroot as part of the vegetables. I used some pasta made in the Pasta Maker that had been in the freezer.
