Cheesey Tuna Sweet Potato Skins - Nifty but Thrifty p3

Simple dinner last night with just me and DS. I've made a note on the recipe to leave at least 1/2 cm of flesh around the skin so that it holds it shape. I only had left the skin and it just collapsed therefore its not a very good boat. I had to steam the sweet potato for an extra 10 mins before they were soft enough. I don't really enjoy the taste of tuna unless its in something, and this was absolutely delish.

Thanks. Another one to try. I'm rather impressed with this little book.
May all dairy items in your fridge be of questionable vintage.
