Lovely Julie, I'm a puff pastry tragic and I love these too.  I just use any cheese, I rarely buy different cheeses.

I had forgotten about these; DD and I both loved them, great for a lunch with salad.

I thought we might have them for Sunday night dinner. We usually have something light and sort of easy.
May all dairy items in your fridge be of questionable vintage.
