Salmon Burgers

Ingredients
500g fresh raw skinless, boneless salmon fillets chopped
small bunch of parsley
zest and juice of one lemon
2 spring onions sliced
good grind of pepper and sea salt
1 egg
almond meal or bread crumbs for coating
Method
Place salmon, spring onions, parsley, zest and lemon juice, egg, salt and pepper in
lock lid and turbo a few times for a second or two until just combined.
With wet hands form into 8 patties and coat in almond meal or bread crumbs, place in fridge to chill until set.
Cook in a little oil over a low-medium heat until crisp, golden and cooked through.
I found that my mixture was a little wet, I think my lemon was a bit large.
Variation:
Grate some fresh ginger before adding inredients to bowl and swap corriander for parsley.
I converted this from the Healthy Chef
I served these with cauliflower cheese, green beans and cinnamon roasted sweet potato wedges.

How much tastier are patties made with fresh salmom as against canned Den? These sound really nice.

These are very tasty and I think they will go well cold with a salad for lunch.
Maybe something like roasted pumpkin and beetroot with baby spinach and quinoa.

Made these for lunch today - what a great recipe Den!
I am not usually a fan of fish at all, but am trying to be healthy and eat more fish. This recipe was absolutely delicious, and that it saying something coming from me!!
I also really like that it uses fresh salmon and not canned. Thank you!

We had these for dinner tonight. I served them with AF wedges and veggies. They were very nice. Next time I will make a little bit of a seafood sauce for them. Something like sweet chilli and mayonnaise mixed together.

We had these for dinner tonight and I really enjoyed them. I used coriander and panko crumbs. I also crumbed zucchini and mushroom, and took cookie's suggestion and served it with a seafood sauce. My mixture was quite runny too, but they turned out fine. I fried the skin from the fillets and served them with a salad.

Wow, these sounds delicious. Wish I had seen this recipe earlier as we had pan fried Salmon on Wednesday night. DH came home from cub scouts (excursion to supermarket) with $60 worth of salmon and steaks.
